To be honest, I didn't know what to expect when roasting it. You never really know with these natural processed coffees. The cup is a little heavier-bodied than something you might get from a washed coffee. The fruits definitely noticeable, but not tangy. The idea behind this mill is simple: make the process easier for both the coffee producers and the export partners by centralizing the most technical parts of processing.\u003c\/p\u003e\n\u003cp data-start=\"468\" data-end=\"816\"\u003eFor this lot, eight local farmers delivered freshly harvested coffee cherries to the mill on the same day they were picked. When the cherries arrived, the team measured their Brix (sugar content) and pH to ensure quality and consistency. From there, the cherries were sealed in large, airtight tanks and left to ferment for five days.\u003c\/p\u003e\n\u003cp data-start=\"468\" data-end=\"816\"\u003eAfter fermentation, the cherries were moved to raised drying beds beneath a parabolic dryer, where they slowly dried over the course of about 30 days.
