Cup Description: 

This Chiapas leans into the comforting side of the flavor spectrum—sweet, nutty, and mellow, with a low-key acidity that lets the other flavors shine. Though, don’t be fooled, you might taste a little bit of apple also!

In the cup, those cozy notes carry through: dark sugars, like caramel just tipping into burnt, with nutty touches that remind us of chocolate almond granola or a pistachio snack bar. A nice bittersweet roastiness comes in at the end, along with a slight cocoa edge that finishes with just a wisp of herbal sharpness.

Balanced and grounding, this one’s a comfort brew with just enough complexity to keep it interesting. It’s what we’d call our “crowd pleaser”. 

Farm Notes

This lot comes from a small community of producers in the highlands around Villa Corzo, Chiapas. The farms here are modest—usually just 3 to 5 hectares—and sit at elevations ranging from 1300 up to 1900 meters. Most are planted with a mix of old-growth cultivars like Bourbon and Typica, along with a few hardy hybrids that help with disease resistance.

Each farmer handles their own processing at home, taking the coffee all the way from cherry to dried parchment before bringing it to the local mill. It’s small-scale and hands-on, and that kind of care shows in the cup. Because every farm processes their own coffee, you get a lot of variation between batches—but when blended well, like this one, it adds a layer of depth and complexity.

We found this community blend to have a clean structure, with gentle acidity and soft top notes when roasted light. Go darker, and it leans heavy into bittersweet chocolate and deeper roast tones—perfect for a cozy cup or a balanced espresso. It’s an easygoing, crowd-pleasing coffee that feels right at home wherever you brew it.

FAQ

How do subscriptions work?

Select a frequency, how often you'd like to receive fresh coffee. Your card will be charged for today's purchase and depending on which frequency you chose (every week, every two weeks, once a month), your card will be charged from today's date and I will fulfill those orders then. You will receive fresh coffee based on the frequency of your subscription!

How do I choose the grind size?

Depends on how you brew your coffee! If you use a regular coffee pot, choose the drip option and I'll grind it the right size for you. Same for all other options.

Do you have "K-cups"?

The short answer is no. HOWEVER, if you use a Keurig, you can simply put the coffee I send you in a re-useable K-cup. Same for Nespresso machines.

Do I need special equipment to brew this coffee?

Absolutely not! You can brew this coffee with your equipment of choice, however you enjoy your coffee. I tend to enjoy pour-over coffees, but feel free to use your typical coffee pot, French press, espresso machine, etc. Whatever floats your boat!

One caveat is that I will have some coffees that I have roasted with specific brew methods in mind (looking at you espresso!). That being said, you can enjoy all of these coffees with any brew method!
